A Taco Tuesday Fiesta

It came to our attention recently that our diets were severely lacking in one major food group. Fruits and veggies were covered, as were lean meats and legumes. So what exactly was missing, you ask? TACOS. Now, some of you might say that tacos aren’t a food group, but we say you’re wrong (and also we don’t need that kind of negativity).

Since we are clearly lacking in the taco department, we thought we’d start observing the weekly holiday of Taco Tuesday. We adore this alliterative day for so many reasons, but mostly because we get to combine two of our favorite things: Fiesta and fiestas!

As with any good Taco Tuesday fiesta, we have start with a margarita, because nothing tastes better than tequila when you realize it’s only Tuesday (kidding!). If you choose not to partake in alcohol, there are plenty of virgin margarita recipes on Pinterest. This one from food.com is one of our favorites. For this pitcher, however, we used a tried and true recipe from The Pioneer Woman.

Now, a real Taco Tuesday would be incomplete without one of our favorite sides: guacamole! We’ve tried so many different kinds of store bought guac, as well as guacamole flavor packets, but we’ve found that the best way to make it is from scratch, with fresh ingredients. For a simple recipe, just combine a mashed avocado with red onion, lime juice, salt, and cilantro to your liking. Be warned, though! One serving of this guac can quickly turn into two (and then three, and then four…) 😉

On to the main attraction: the taco! Now, we don’t think we’ve ever met a taco we didn’t like, but this Spicy Shrimp taco is one of our favorites. It’s easy to make and will have you reaching for more (if you’re not already full of that tasty guac, that is). We love this recipe and think you will too!

Spicy Shrimp Tacos

Ingredients
  1. 1/2 tbsp. olive oil
  2. 1/2 tsp. chili powder
  3. 1/4 tsp. cumin
  4. 1/2 tsp. salt
  5. 8 medium shrimp, thawed and deveined
  6. 2 corn tortillas
  7. 1 tbsp. fresh cilantro
  8. 1 tbsp. roasted pepitas
  9. 1 tsp. diced jalapeños
  10. 1/4 cup purple cabbage
  11. 2 tsp. lime juice
  12. 1/2 avocado, sliced
Instructions
  1. Heat a pan to medium-high on the stovetop. Mix the olive oil, chili powder, cumin, and salt in a large bowl. Add the shrimp and toss to coat. Cook shrimp until translucent, about 1 1⁄2 to 2 minutes on each side.
  2. Pop tortillas in the oven, just to warm up. Place 3-4 shrimp, avocado, cilantro, roasted pepitas, jalapeño, and cabbage on the tortilla.
  3. Top with lime juice and enjoy!

Last but not least is the décor. We wanted our Taco Tuesday fiesta to be as festive as possible, so we used Sage, Poppy, Daffodil, and White, which is a color combo that we’re currently obsessed with. We picked up a few tiny succulents to be planted in our Loaf Pan and Ramekin for a fun cactus-y theme that goes right along with the “tablecloth”. You can DIY your own Taco Tuesday themed tablecloth with butcher paper and white chalk pens. Finally, pick up some fun cocktail napkins and you’re all set!

Throwing the Perfect Movie Award Night Party

At Fiesta Dinnerware, we’ll take any opportunity to throw a party. Food and friends – it’s what life’s all about! So with the biggest movie award night just around the corner, we decided it’s lights, camera, action for a party themed around one of our favorite movies of the year…La La Land. Our décor, food, drink, and party favor all are inspired by this beautiful film about a jazz musician and actress searching for fame in LA.

Here are some ideas to plan your own movie award night viewing party:

Lay out the red carpet. Since our theme is based on La La Land, we’re rolling out a “piano carpet” that we found online. Ask a few friends to act like the paparazzi as your guests arrive.

Dress for the occasion. How often do we get a chance to dress up? Do like the stars do and dress to the nines! You could even go a step further and ask your guests to dress like their favorite actor or actress.

Provide a star-studded backdrop. Try using a giant movie poster as your backdrop. And don’t forget plenty of props like hats, boas and sunglasses.

Make show stopping snacks. Set up a buffet table with gourmet snacks. Be sure to coordinate your dinnerware and serveware with the theme of your party. With our La La Land theme, we’re using a Fiesta Dinnerware color palette of Lapis, Cobalt, White, and new color Daffodil (look for Daffodil in stores and online this June!).

We’re serving a variety of simple foods, but it’s the extra touches that make each dish special. Our menu includes:

Truffle Oil Parmesan Popcorn: Make or buy premade popcorn. Drizzle with a combination of melted butter and truffle oil. Sprinkle with shaved parmesan cheese and fresh parsley. We found some fun glammed up movie theater popcorn bags in which to serve the popcorn. People can scoop it right out of a Fiesta Signature Bowl.

Chicken on a Stick: At one point in the movie, the main character Sebastian mentions that he’d like to open a jazz club called “Chicken on a Stick” in honor of Charlie Parker. It’s a no brainer what we’re serving after a comment like that!

We’re grilling chicken skewers and serving them with a variety of sauces, like barbeque, honey mustard and peanut sauce. Our friends at Oh So Delicioso have a recipe for a yummy Peanut Dipping Sauce.

Serve the Chicken on a Stick on a Medium Oval Platter with the dipping sauces in our Bouillon Bowls set on top of a Small Bread Tray. Three of the bowls fit perfectly in the Small Bread Tray.

Cheese Tray for a Star: We’re having some fun with a set of star cookie cutters in various sizes to get our cheese tray Hollywood ready. Just cut different types of cheese into star shapes and serve with crackers and some dried fruit. We served our cheese tray on a Square Handled Serving Tray.

The new Bistro Crescent Plate is the perfect size and shape for serving small bites at a party. Don’t you think?

Camera Ready Cupcakes: Is it possible to have a party without cupcakes? It would be hard to convince us otherwise. Vanilla cupcakes are always a hit. Need a recipe? Look no further than The Sugary Shrink. We’re sprinkling ours with gold stars to dress them up.

Here’s a fun Fiesta hack: turn a Cup upside down and place an Appetizer Plate on top to make a mini cake stand. Or a Hostess Serving Bowl upside down topped with any plate or platter for a larger cake stand.

Create a signature drink. Champagne will always do in a pinch, but creating your own signature drink makes the party all that more glam. We’re serving a La La Lapis Martini (recipe below).

La La Lapis Martini Recipe

Ingredients:
Lemon wedge
Ice cubes
1/4 cup cranberry juice cocktail
2 tablespoons (1 oz.) citron vodka or vodka
2 tablespoons (1 oz.) blue curacao
1 tablespoon fresh lemon juice 

Directions:
1. Moisten rim of chilled martini glass with lemon wedge. Sprinkle sugar onto small plate, and dip moistened rim into the sugar to coat lightly. 
2. Fill cocktail shaker with ice. Add cranberry juice, vodka, curacao, and lemon juice; cover and shake.
3. Strain into martini glass and garnish with lemon wedge.

Cast your ballots. Before the show starts, provide a ballot sheet listing all the nominees. Ask your guests to cast their votes. Whoever predicts the most wins, gets a prize of their own!

Present your party favors. After the best picture is announced, give your guests some swag. We decided at our party, everyone goes home a winner. It’s golden statues all around: chocolate pops decked out in edible gold, of course!

Hummus: Healthy Homemade Comfort Food

While we’re still in the throes of winter, spring is just around the corner. If you’re anything like us, our minds are thinking beach, but our tummies are thinking comfort food.

For a delicious snack that’s healthy, nourishing and comforting, we turned to our friend Chef Maria Loi of New York’s Loi Estiatorio restaurant and author of The Greek Diet for her famous Hummus recipe.

We served our hummus with fresh veggies and warm pita bread. In the spirit of the Greek Islands, we went with a color palette of blues and white for our Fiesta dishes. Lapis, Turquoise and White are as crisp and fresh as the carrots, celery and snap peas we served for dipping.

This recipe makes plenty for a party. Using our Appetizer Plates, Square Handled Serving Tray and 2pc Dip and Spreader Set, it’s simple to serve a group.

If you’ve never made your own hummus, it’s nothing like the kind you buy in the grocery store. It’s so simple to make.

In this recipe, while you’re welcome to use canned chickpeas, we encourage you to try using dried chickpeas instead. Served slightly warm along with fresh warm pita bread — you’re in for a treat!

Ingredients
  1. 1 red bell pepper
  2. 2 cups dried chickpeas or one 16-ounce can chickpeas
  3. 1 teaspoon baking soda (if using dried chickpeas)
  4. 1 medium onion, quartered
  5. 2 garlic cloves, peeled
  6. 1/4 cup tahini
  7. 2 to 3 tablespoons fresh lemon juice
  8. Red pepper flakes (optional)
  9. 1/2 cup extra-virgin olive oil, plus more for drizzling
  10. Salt
  11. Warmed whole-grain pita bread and/or vegetables, for serving
Instructions
  1. Roast the pepper by placing it over an open flame at medium-high heat on your stovetop. Rotate it consistently using tongs until the entire outside is charred, about 10 to 15 minutes. Place in a bowl, cover with plastic wrap, and allow to steam for 15 minutes. Remove the pepper from the bowl, peel the skin using your hands, remove the seeds, and chop. Set aside.
  2. If you're using canned chickpeas, skip to Step 4. If you are using dried chickpeas, place them in a medium pot. Cover the chickpeas with water, stir in the baking soda, and allow them to soak overnight.
  3. The next day, rinse and drain the soaked dried chickpeas. Heat a medium pot over medium heat until hot. Add the chickpeas, onion and enough water to cover the contents of the pot by 3 inches. Cover the pot and bring to a boil. Reduce the heat to a simmer and continue to cook the chickpeas for about 45 minutes, skimming as needed to remove foam, until soft. Drain the chickpeas and reserve the onion. Allow the chickpeas to cool.
  4. If using canned chickpeas, saute the onion over medium heat until translucent, about 5 minutes. Combine the roasted pepper, garlic, and tahini in a food processor or blender. Process, scraping down the sides of the processor as necessary, until smooth. Add the chickpeas, sauteed onion (or reserved onion if using soaked chickpeas), lemon juice, and pepper flakes (if using). Process, scraping down the sides again if necessary, until smooth. With the machine running, gradually add the 1/2 cup olive oil and process until the mixture is emulsified. Add salt to taste and more pepper flakes, if desired. Spoon the hummus into a serving dish.
  5. To serve, drizzle with extra-virgin olive oil and pair with warm whole-grain pita brea and/or fresh vegetables, including celery, carrots, and sliced red and green peppers.

At any given time, Fiesta has 15 colors. So as we add Daffodil, one of our old friends will retire – Paprika. Paprika was in production since 2010.

The Fiesta Guide to Setting a Thanksgiving Buffet Table

Are you hosting Thanksgiving, or perhaps a “Friendsgiving” this year? Planning, delegating and cooking can be quite stressful! Something that’s often neglected in the midst of all the Thanksgiving prep is how to set your buffet table.

Well, we have your back with a “Guide to Setting a Thanksgiving Buffet Table” that is pretty, colorful and provides a simple flow as your guests load up their plates.

It all starts with the buffet table itself. We used a basic six-foot folding table covered with a tablecloth that complemented our color scheme. To add visual interest and height to the dishes toward the back of the table, we placed two boxes underneath the tablecloth. This not only looks more pleasing to the eye, but it makes it easier for people to reach the food that isn’t right up front.

Next, we outlined our menu and pulled the serving pieces we’d be using for each dish.

We started with a stack of dinner plates in a variety of seasonal colors: (from top to bottom) Poppy, Turquoise, Sunflower, Scarlet, Shamrock, Tangerine, Claret, and Lemongrass. It’s a good idea to place the dinner plates in the front corner where the buffet line will start.

Then we used a 3 Tier Server for rolls and other breads, followed by salad, a side dish and casserole. The salad and side dish will be served in our multipurpose Bistro Bowls in Medium and Large sizes. And the casserole is featured in a traditional 9×13” Rectangular Baker. (PS: All of our dishes can be heated safely in the oven up to 350 degree and bakeware can go up to 500 degrees.)

At the center of the feast is the star of the day: turkey! Depending on how large your bird is, we have a variety of serving platters in sizes Small, Medium, Large, and Extra Large. We’re planning for a lot of leftovers, so we used the Extra Large Oval Platter.

Condiments like cranberries and butter are next. We used the Individual Casserole for our cranberries and the Extra Large Covered Butter for the butter.

Napkins and flatware are best placed at the end of the line so your guests aren’t juggling them while piling up their plates.

Finally, it’s time for dessert. Yum! We made room for a pie and a cake. For the pie, we used the Deep Dish Pie Baker. For the cake, we spiced it up with a little Fiesta hack to create a “plate stand.” We turned a Hostess Serving Bowl upside down and placed a Baking/Pizza Tray on top. To serve dessert, a stack of Salad Plates finishes off the assortment of dishes.

We sprinkled in some mini pumpkins, flowers and greenery to decorate and soften the tablescape. With the buffet table set, we’re ready for full bellies and naps!

Gourmet S’mores Skillet for National S’mores Day

When we noticed there was an entire day dedicated to s’mores, it didn’t take us long to grab our new Individual Skillet and try some sticky marshmallowy recipes.

We created a Gourmet S’mores Skillet that grownups and kids alike will devour. Warning: you might want to double or triple this recipe.

This spin on a campfire classic can be made right at home in the oven, which means it can be made any time of the year. And that’s just fine with us!

It starts with a layer of a buttery pretzel crust. We subbed pretzels for graham crackers because, let’s face it, sometimes after eating s’mores we’re left craving a bag of chips. And then you need something sweet again. It’s an endless cycle of salty/sweet. We figured, let’s just put the salt in the sweet and save all the trouble and extra calories.

Next is a layer of creamy dark chocolate fudgy goodness. We traded the milk chocolate that’s traditionally used in s’mores for decadent dark chocolate because here at Fiesta Dinnerware, we’re colorful and different. Our recipes are a little different too! The saltiness of the pretzels combined with the richness of the dark chocolate is completely divine.

The final layer is simply marshmallows. That’s what ultimately makes a s’more a s’more, right? We chose mini marshmallows, but you could use larger marshmallows if you’d like. The marshmallows toasted to a perfect golden brown under the broiler in our Individual Skillet, featured in the new Foundry cast iron-like finish.

For the pretzel crust
  1. 1 cup finely crushed pretzels (about 3 handfuls)
  2. 4 tablespoons sugar
  3. 12 tablespoons melted butter
For the chocolate filling
  1. 12 ounces dark chocolate chips
  2. 1 (14-ounce) can sweetened condensed milk
For the marshmallow layer
  1. 1 (10.5 ounce) bag marshmallows
Instructions
  1. Preheat oven to 325 degrees F. Grease two Fiesta Individual Skillet Bakers or 1 8x8" baking pan with butter.
  2. Make the pretzel crust. In a medium bowl, stir together the pretzel crumbs, sugar and melted butter until all of the crumbs are evenly moistened. Pour half into the prepared Fiesta Individual Skillets or the full amount into an 8x8" pan and press evenly into a tight, compact layer. Bake until it is lightly browned and has a faint toasted smell, about 10 minutes. Remove from the oven.
  3. Make the chocolate filling. Place the chocolate and sweetened condensed milk in a heatproof bowl and set it over a small pan of barely simmering water. Stir occasionally until it is completely melted and smooth. Immediately pour it over the pretzel crust and spread it into an even layer.
  4. Immediately place the marshmallows on top of the chocolate filling, pressing down slightly. When ready to serve, turn on your oven's broiler and place the pan on the center rack. Broil until the marshmallows are puffed and browned, 1-2 minutes. Removed from the oven and let cool briefly.
